Vegan Black Bean Soup: In a large pot, sauté a diced onion and some minced garlic in a small amount of oil until the onion is translucent. Add a diced bell pepper and a diced jalapeño pepper (optional) and sauté for a few more minutes. Add a can of diced tomatoes, a can of black beans (drained and rinsed), a cup of vegetable broth, a teaspoon of cumin, a teaspoon of chili powder, and a half teaspoon of salt. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes. Serve hot, garnished with chopped cilantro, if desired.


Vegan Pasta Salad: Cook some pasta according to the package directions and let it cool. In a large bowl, combine the pasta with diced vegetables such as cherry tomatoes, cucumber, bell pepper, and red onion. For the dressing, whisk together some olive oil, red wine vinegar, Dijon mustard, and a clove of minced garlic. Pour the dressing over the pasta and vegetables and toss to coat. You can also add some diced vegan cheese, cooked chickpeas, or sliced olives for added protein and flavor.

Vegan Stir-Fry: Heat a small amount of oil in a wok or large frying pan over high heat. Add some diced firm tofu and stir-fry until browned. Remove the tofu from the pan and set it aside. Add a little more oil to the pan and add some sliced vegetables such as broccoli, bell pepper, and carrot. Stir-fry the vegetables until they are crisp-tender, then add the tofu back to the pan along with a sauce made from equal parts soy sauce and hoisin sauce and a pinch of sugar. Stir until the sauce is thickened and the tofu is heated through. Serve over rice or noodles
